Low Carb Chili Chicken

Ingredients

  • For Chicken:
  • 800 g Boneless skinless chicken breasts approx.. 3 breasts
  • 2 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1 tsp Ground coriander
  • 1 tsp Garlic powder
  • Low calorie cooking spray
  • For Chili Sauce:
  • 1 Large onion diced
  • 2 cloves Garlic minced
  • 3 Jalapeno peppers (or Red peppers if you prefer less heat) diced
  • 2 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1/2 tsp Garlic powder
  • 1 tin Tomatoes
  • 1/2 pint Chicken stock
  • Salt & pepper to taste
  • 20 g Fresh coriander chopped
  • Low calorie cooking spray

Instructions

  • Preheat the oven to 400 F
  • Mix together the spices for the chicken and cover chicken completely
  • Spray a baking tray with low calorie spray and place the chicken on to the tray, spray with some more and place in oven.
  • Bake for 25 minutes or until cooked through
  • Meanwhile, fry the onion and garlic for the sauce in cooking spray until the onions become translucent
  • Add diced peppers along with spices and fry until the peppers are softened
  • Add the chopped tomatoes, coriander and chicken stock, and season to your taste
  • Cover and cook for 20 minutes on medium heat, then uncover and cook for 10 minutes on high heat
  • Remove the chicken from the oven and shred using Bear Claws (or 2 forks)
  • Add chicken to chili sauce and stir until totally combined
  • Serve with a sprinkling of coriander
